Soft Shell Veggie Tacos

Ingredients
  

  • 4 soft tortillas (corn or flour)
  • ½ cup red peppers
  • ½ cup green peppers
  • 1 cup tomato
  • 1 cup onion
  • 1 avocado
  • 1 cup GO VEGGIE Lactose Free Cheddar Shreds
  • ½ cup salsa
  • 2 tbs. olive oil
  • 1 slice lime

Instructions
 

  • Cut onion, tomato, peppers into bite size pieces
  • Heat 2 tbs. olive oil in medium sized skillet and add onion, tomato and peppers. Cook until vegetables are softened (about 5-10 minutes)
  • Add veggies to tortilla, top with GO VEGGIE shreds
  • Cut avocado into slices and top taco with a few slices per tortilla
  • Serve with a side of salsa and lime to garnish.
