Cut onion, tomato, peppers into bite size pieces
Heat 2 tbs. olive oil in medium sized skillet and add onion, tomato and peppers. Cook until vegetables are softened (about 5-10 minutes)
Add veggies to tortilla, top with GO VEGGIE shreds
Cut avocado into slices and top taco with a few slices per tortilla
