Slice up the sweet potatoes thinly. Place on a baking sheet and lightly spray or coat with extra virgin olive oil. Add salt and pepper to taste. Place under a broiler until tops begin to look golden brown. Flip chips and cook on opposite side until color matches.
Arrange on cookie sheet with tortilla chips.
Add vegetarian chili on top. You can add the whole can or just half depending on your preference. Again, you can use vegetarian or regular. Your choice.
Next, sprinkle on the GO Veggie! Mexican Shreds until chips are well covered. Add black olives and jalapeños.
