Spread a small amount of buttery spread over an entire 2 quart casserole dish to cover all sides. Layer potatoes and onions into the dish and sprinkle with salt and pepper between each layer.
In a medium sauce pan, melt the buttery spread over medium heat, and stir in flour and 1/4 c dairy free cheese until well blended. Wisk in vegetable stock and cook while stirring constantly until it boils and thickens.
Pour sauce over layered potatoes and onions and sprinkle with paprika to taste. Top with remaining 1/4 c. Dairy Free Mozzarella cheese.
Bake uncovered at 350 degrees for about 50 minutes or until potatoes and tender and golden brown. Allow to cool and serve.GO Veggie! Team
