Cheesy Cilantro Pesto

  • 2 cloves garlic, peeled and minced
  • 2 cups packed fresh cilantro leaves
  • ¼ cup olive oil
  • 2 Tbsp. freshly squeezed lemon juice
  • Sea salt and pepper, to taste
  • 2 Tbsp. chopped walnut halves, optional
  • 3 Tbsp. GO Veggie! Lactose Free Grated Parmesan Topping


  • Puree garlic and cilantro in a food processor. With the processor running, slowly add oil, lemon juice, sea salt, pepper, walnuts and parmesan cheese. Puree until smooth and serve with raw vegetables or crackers.
