Ingredients
2 ounces of GO Veggie! Dairy Free Mexican Style Shreds
2 Tbsp. GO Veggie! Dairy Free Classic Plain Cream Cheese
Link of Field Roast Smoked Apple Sage Vegan Sausage, sliced into pieces
3 ounces of organic firm tofu, diced
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1/4 red onion, thinly sliced
2 slices of jalapeno pepper (optional)
Handful of washed baby spinach
Salt & pepper to taste
Instructions
Sauté bell pepper, onion and jalapeno in a pan with olive oil for a couple of minutes to soften.
Add in sausage and tofu to warm
Stir in GO Veggie! Shreds and Cream Cheese and cover for one minute until melted.
Add spinach until wilted.
