Summertime Mango Chicken Salad with Blueberries

Ingredients
  

  • 1 cup fresh blueberries
  • 2 cooked organic chicken breasts, thinly sliced
  • 2 celery stalks, thinly sliced
  • 1 head kale, finely chopped
  • 10 cherry tomatoes, quartered
  • 2 scallions, thinly sliced
  • ½ cup dried mango
  • 2 Tbsp olive oil
  • 1½ Tbsp balsamic vinegar
  • Sea salt and pepper, to taste
  • 2 Tbsp GO Veggie! Lactose Free Parmesan Cheese

Instructions
 

  • COMBINE blueberries, sliced chicken, celery, kale, tomatoes, scallions, mango, olive oil, balsamic vinegar, sea salt, and pepper in a large bowl; toss to combine. Serve chilled topped with Parmesan cheese.
