- 2 Large Sweet Potatoes
- Organic Tortilla Chips (optional)
- 1 can Vegetarian Chili
- 2 tbsp Black Olives, sliced
- 2 tbsp Jalapeño Peppers, sliced
- 1 cup GO Veggie! Dairy Free Mexican Style Shreds
INSTRUCTIONS
- Slice up the sweet potatoes thinly. Place on a baking sheet and lightly spray or coat with extra virgin olive oil. Add salt and pepper to taste. Place under a broiler until tops begin to look golden brown. Flip chips and cook on opposite side until color matches.
- Arrange on cookie sheet with tortilla chips.
- Add vegetarian chili on top. You can add the whole can or just half depending on your preference. Again, you can use vegetarian or regular. Your choice.
- Next, sprinkle on the GO Veggie! Mexican Shreds until chips are well covered. Add black olives and jalapeños.
- Place cookie sheet back in the oven under the broiler. Cook until cheese is well melted to desired consistency.
