- 1 cup fresh blueberries
- 2 cooked organic chicken breasts, thinly sliced
- 2 celery stalks, thinly sliced
- 1 head kale, finely chopped
- 10 cherry tomatoes, quartered
- 2 scallions, thinly sliced
- ½ cup dried mango
- 2 Tbsp olive oil
- 1½ Tbsp balsamic vinegar
- Sea salt and pepper, to taste
- 2 Tbsp GO Veggie! Lactose Free Parmesan Cheese
INSTRUCTIONS
COMBINE blueberries, sliced chicken, celery, kale, tomatoes, scallions, mango, olive oil, balsamic vinegar, sea salt, and pepper in a large bowl; toss to combine. Serve chilled topped with Parmesan cheese.
