INGREDIENTS
- 4 soft tortillas (corn or flour)
- ½ cup red peppers
- ½ cup green peppers
- 1 cup tomato
- 1 cup onion
- 1 avocado
- 1 cup GO VEGGIE Lactose Free Cheddar Shreds
- ½ cup salsa
- 2 tbs. olive oil
- 1 slice lime
INSTRUCTIONS
- Cut onion, tomato, peppers into bite size pieces
- Heat 2 tbs. olive oil in medium sized skillet and add onion, tomato and peppers. Cook until vegetables are softened (about 5-10 minutes)
- Add veggies to tortilla, top with GO VEGGIE shreds
- Cut avocado into slices and top taco with a few slices per tortilla
- Serve with a side of salsa and lime to garnish.
