INGREDIENTS
- Tostados:
- ½ medium red onion, sliced
- 1 green bell pepper, stem and seeds removed, sliced
- 1 orange or red bell pepper, stem and seeds removed, sliced
- 1 (15 oz) can black beans, rinsed
- 4 tablespoons olive oil
- 3 small or 2 large salmon filets
- 1 teaspoon paprika
- ½ teaspoon cumin
- ½ teaspoon cayenne pepper
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon salt
- 8 corn tortillas
- For the Avocado Cilantro Cream Cheese Sauce:
- 4 oz GO VEGGIE Classic Plain Cream Cheese
- 1 avocado
- ⅓ cup cilantro leaves
- ½ jalapeno
- juice of 1 lime
- ¼ teaspoon cumin
- ½ teaspoon salt
INSTRUCTIONS
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add onion and bell peppers, and season with salt and pepper.
- Cook for about 10 minutes, until onions and peppers are soft and cooked.
- Add black beans and stir to combine, cooking another 1-2 minutes until they are warm.
- Remove vegetable mixture from skillet.
- Add remaining 2 tablespoons of olive oil over medium-high heat.
