
Cream Cheese Sandwich Roles
These sandwich roles are the perfect addition to a summer or back to school lunch that everyone will love.

INGREDIENTS
- 1/2 cup GO Veggie! Vegan Garlic & Chive Cream Cheese Alternative
- 1/4 cup frozen corn, thawed
- 1 small carrot, diced small
- 1 small Persian cucumber (or 1/2 small seedless cucumber), diced small
- 1 scallion, thinly sliced (optional)
- 3 slices GO Veggie! Vegan Cheddar Slices
- 6 slices soft whole grain bread
INSTRUCTIONS
- Combine cream cheese, corn, diced carrots, cucumbers and scallions in a small bowl and mix well. Set aside
- Cut the crust off the bread. Place 2 slices on a piece of parchment or wax paper, with the bottom edges of each slice against each other. Using a rolling pin, carefully roll them until flat and thin (the 2 pieces will almost stick together, forming one large rectangle)
- Spread about 1/3 of the cream cheese mixture. Unwrap one of the cheddar slices, cut it in half and place them on the bottom. Carefully roll the sandwich tightly and slice into 6 pieces, using a serrated knife
- Repeat the process twice with the remaining bread and cream cheese
