INGREDIENTS
- 12 potatoes, sliced thin
- 3 onions, finely chopped
- 1/3 c Earth Balance natural buttery spread
- 1/2 c GO Veggie! Dairy Free Mozzarella Style Shreds
- 3 c vegetable broth
- 1/3 c all purpose flour
- salt, pepper and paprika to taste
INSTRUCTIONS
- Spread a small amount of buttery spread over an entire 2 quart casserole dish to cover all sides. Layer potatoes and onions into the dish and sprinkle with salt and pepper between each layer.
- In a medium sauce pan, melt the buttery spread over medium heat, and stir in flour and 1/4 c dairy free cheese until well blended. Wisk in vegetable stock and cook while stirring constantly until it boils and thickens.
- Pour sauce over layered potatoes and onions and sprinkle with paprika to taste. Top with remaining 1/4 c. Dairy Free Mozzarella cheese.
- Bake uncovered at 350 degrees for about 50 minutes or until potatoes and tender and golden brown. Allow to cool and serve.
