
Buffalo Chicken Quesadillas
These Buffalo Chicken Quesadillas are great for lunch, as a quick dinner, or as a crowd-pleasing appetizer for a casual backyard get-together – you can even get fancy and throw the quesadillas right onto the grill instead of cooking them on the stove.

INGREDIENTS
- 1/4 cup shredded cooked chicken (about 1 chicken breasts)
- 2 tablespoons wing sauce
- 1 cup Go Veggie! lactose free mozzarella shreds
- 1/2 cup GO Veggie! Cream classic plain cheese alternative
- 2 green onions, chopped
- 2 flour tortillas
- 1 teaspoon butter or butter alternative
INSTRUCTIONS
- Place the shredded chicken in a small bowl. Mix with the wing sauce.
- In a second bowl, combine the mozzarella, cream cheese, and green onions. Mix until thoroughly combined.
- Spread each tortilla with 1/4 of the cheese mixture. Spread the chicken over one side of each tortilla, then fold the other side over the top.
- Melt the butter on a griddle set over medium heat. Add the quesadillas and cook 3-4 minutes on each side, until the tortilla is browned and crisp and the cheese is melted. If necessary, cover the pan for the final minute or two to help the cheese melt.
