INGREDIENTS
- Fresh winter squash of choice, without skins and cubed, OR bag of frozen cubed squash – approximately 4 cups
- 3/4 cup GO Veggie! Lactose Free Monterey Jack & Cheddar Shreds
- 1/2 cup breadcrumbs
- 2 oz olive oil
- Salt and pepper to taste
INSTRUCTIONS
- Preheat oven to 350 degrees.
- Toss squash and olive oil in a bowl, salt and pepper to taste. Pour into deep baking dish.
- In a separate bowl, combine the cheese and breadcrumbs. Sprinkle over the top of the squash.
- Bake for 30-40 minutes or until brown on top. Cool and serve.
