INGREDIENTS
BURGER:
- 1 (16 oz.) can black beans, drained and rinsed
- ½ Green bell pepper, diced
- ½ Yellow onion, diced
- 3 Cloves of garlic, minced
- 1 egg or egg substitute
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 teaspoon Tabasco or Sriracha
- ½ cup breadcrumbs
- TOPPINGS (per serving):
- 1-2 GO VEGGIE Lactose & Soy Free White Cheddar Deli Slices
- 1 whole grain hamburger bun
- 1 tablespoon of mayo or mayo alternative
- ¼ cup fresh arugula
- 1 slice of tomato
- 1-2 red onion rings
INSTRUCTIONS
BURGER PATTY:
- Preheat oven to 375 degrees and lightly oil a baking sheet.
- Mash black beans with a fork in a bowl until thick and paste-like.
- Add the diced pepper, onion and garlic into a food processor or blender and pulse until fine. Stir into the mashed black beans.
- In a separate bowl, stir together the egg or substitute with chili powder, cumin and hot sauce.
- Combine the egg mixture and mashed bean mixture. Add the breadcrumbs until the mixture holds together. Divide into 4 patties.
- Place patties on prepared baking sheet and bake for 10 minutes on each side.
- ASSEMBLY:
- Separate the hamburger buns in two and spread the mayo or alternative onto the bottom halves.
- Add the cooked burgers, followed by the GO VEGGIE White Cheddar Deli Slices.
- Top with the tomato, onion and arugula, followed by the top of the bun. Serve with sweet potato chips or side of your liking!
